Turkey Soup Continental

Ingredients
- 1/4 cup margarine ⓘ
- 1 cup chopped turkey ⓘ
- 2 tablespoons chopped onion ⓘ
- 2 cups diced raw potatoes ⓘ
- 1 cup diced celery ⓘ
- 2 cups turkey broth ⓘ
- 2 1/2 cups cream style corn ⓘ
- 1 tall can evaporated milk ⓘ
- 1 teaspoon salt ⓘ
- 1/4 teaspoon paprika ⓘ
- 1/4 teaspoon ginger ⓘ
- 1/4 teaspoon pepper ⓘ
- 2 tablespoons chopped parsley ⓘ
Instructions
- On top of stove, melt margarine over low heat.
- Add chopped turkey and chopped onion, cook until onion is well blended and slightly thickened.
- Add diced raw potatoes, diced celery, and turkey broth.
- Simmer until vegetables are tender.
- Add cream style corn, evaporated milk, and seasonings (salt, paprika, ginger, pepper).
- Heat thoroughly, stirring occasionally.
- Season to taste with additional salt and pepper.
- Garnish with chopped parsley and serve hot with crackers, hard rolls, or toast.
