Ingredients

  • 1/4 cup margarine
  • 1 cup chopped turkey
  • 2 tablespoons chopped onion
  • 2 cups diced raw potatoes
  • 1 cup diced celery
  • 2 cups turkey broth
  • 2 1/2 cups cream style corn
  • 1 tall can evaporated milk
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ginger
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped parsley

Instructions

  1. On top of stove, melt margarine over low heat.
  2. Add chopped turkey and chopped onion, cook until onion is well blended and slightly thickened.
  3. Add diced raw potatoes, diced celery, and turkey broth.
  4. Simmer until vegetables are tender.
  5. Add cream style corn, evaporated milk, and seasonings (salt, paprika, ginger, pepper).
  6. Heat thoroughly, stirring occasionally.
  7. Season to taste with additional salt and pepper.
  8. Garnish with chopped parsley and serve hot with crackers, hard rolls, or toast.
