Ingredients

  • 2 cans 14 oz chicken broth
  • 5 large potatoes
  • 1/2 cup light cream
  • 2 Tbsp butter
  • pepper

Instructions

  1. Place chicken broth and potatoes in a saucepan, heat to a boil.
  2. Cover and cook over medium heat for 10 minutes or until potatoes are tender.
  3. Drain the potatoes, reserving the broth.
  4. Mash the potatoes with 1/4 cup of the reserved broth, light cream, butter, and pepper.
  5. Add additional broth if needed until desired consistency is reached.
