Underground Ham is a hearty casserole combining tender ham, creamy mushroom sauce, cheesy mashed potatoes, and crispy bacon, perfect for comforting family dinners or special gatherings.

Ingredients

  • 4 cups ham, cubed
  • 4 tablespoons margarine
  • 1/2 cup chopped onion
  • 1 tablespoon Worcestershire sauce
  • 2 cans mushroom soup
  • 2 cups Velveeta cheese, cubed
  • 4 quarts mashed potatoes
  • 1 pint sour cream
  • 1 pound bacon, browned and crumbled

Instructions

  1. Combine ham, margarine, chopped onion, and Worcestershire sauce in a skillet and cook until onions are tender.
  2. Spread the cooked mixture in the bottom of a medium-sized roasting pan.
  3. In a saucepan, heat mushroom soup, milk, and Velveeta cheese until melted and smooth.
  4. Pour the cheese and mushroom sauce over the ham mixture in the roasting pan.
  5. Prepare mashed potatoes without salt or milk, then mix in sour cream.
  6. Spread the mashed potatoes over the cheese and ham mixture.
  7. Sprinkle browned, crumbled bacon over the top.
  8. Bake at 350°F for 20 minutes or until hot and bubbly.
