Ingredients

  • 1 6-ounce can tomato paste
  • 1 teaspoon salt
  • 1/8 teaspoon cheddar cheese
  • 1 box Jiffy corn muffin mix
  • 1 pound ground beef

Instructions

  1. Cook ground beef, chopped onion, and green pepper in a skillet until browned.
  2. Stir in flour and cook for another minute.
  3. Add tomato paste, salt, and pepper; mix well.
  4. Remove from heat and stir in cheddar cheese.
  5. Spread the beef mixture evenly in a 9-inch pan.
  6. Prepare the Jiffy corn muffin mix as directed on the box.
  7. Pour the prepared corn muffin batter over the beef mixture.
  8. Bake in a preheated oven at the temperature specified on the cornbread mix box for 30-35 minutes.
  9. Let stand for 5 minutes before serving.
