Ingredients

  • 3 cups fresh or frozen cranberries, thawed
  • 1 3/4 cups sugar, divided
  • 1/2 cup chopped pecans
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • Whipped cream or vanilla ice cream

Instructions

  1. Place cranberries in a greased 8-inch square baking dish.
  2. Sprinkle with 3/4 cup sugar and chopped pecans.
  3. In a separate bowl, beat eggs and melted butter together.
  4. Add remaining 1 cup sugar and flour to the egg mixture, stirring until combined.
  5. Pour the batter evenly over the cranberries in the baking dish.
  6. Bake at 350°F (175°C) for about 40 minutes or until golden and set.
  7. Allow to cool slightly before serving topped with whipped cream or vanilla ice cream.
