Upside-Down Sausage Cornbread

- Crumble the sausage into small pieces and brown it in a skillet.
- Drain off the fat and spread about three-quarters of it on the bottom of an 8 x 8-inch baking pan.
- Prepare the cornbread mix according to the package directions, mixing with the egg and milk, then pour over the sausage and spread evenly.
- Bake at 400°F for 20 to 30 minutes until the cornbread is done.
- While the cornbread is baking, add the undiluted mushroom soup to the pan with the remaining sausage.
- Stir over low heat until the sausage is fully coated and the bottom of the pan is clear of sausage.
- Add the cheese and stir until melted and evenly distributed through the sauce.
- Once baked, invert the pan onto a large plate to remove the cornbread.
- Cut into squares and serve with the sausage and mushroom sauce.
