Upside-Down Sausage Cornbread

Ingredients

  • 1 lb pork sausage
  • 1 pkg corn muffin mix
  • 1 can mushroom soup
  • 1 egg
  • 1/3 cup milk
  • 1/4 lb cheese

Instructions

  1. Crumble the sausage into small pieces and brown it in a skillet.
  2. Drain off the fat and spread about three-quarters of it on the bottom of an 8 x 8-inch baking pan.
  3. Prepare the cornbread mix according to the package directions, mixing with the egg and milk, then pour over the sausage and spread evenly.
  4. Bake at 400°F for 20 to 30 minutes until the cornbread is done.
  5. While the cornbread is baking, add the undiluted mushroom soup to the pan with the remaining sausage.
  6. Stir over low heat until the sausage is fully coated and the bottom of the pan is clear of sausage.
  7. Add the cheese and stir until melted and evenly distributed through the sauce.
  8. Once baked, invert the pan onto a large plate to remove the cornbread.
  9. Cut into squares and serve with the sausage and mushroom sauce.
