- Clean, wash, and dry the catfish; sprinkle with salt and set aside.
- Heat cooking oil in a pan over medium heat.
- Add mustard seeds and curry leaves; sauté until they crackle.
- Stir in green chilies and grated onion; cook until onion becomes translucent.
- Add salt, turmeric, garlic paste, cayenne pepper, cumin powder, and coriander powder; cook for 2 minutes until fragrant.
- Add sliced tomato and cook until it softens.
- Stir in tamarind paste and cook for another 5 minutes to blend flavors.
- Gently add the prepared catfish to the curry, coating with the masala.
- Cover and simmer on low heat for 15-20 minutes until fish is cooked through.
- Serve hot with rice or bread.
