Ingredients

  • 2 1/2 cups sifted flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup Crisco
  • 3/4 cup milk
  • 1/4 cup cherry juice
  • 1 teaspoon vanilla
  • 2 teaspoons almond extract
  • 4 egg whites
  • 18 cherries, well drained and finely chopped
  • 1/2 cup walnuts

Instructions

  1. Sift dry ingredients into a mixing bowl and add shortening.
  2. Combine milk and cherry juice in a separate cup.
  3. Add 3/4 cup of the liquid mixture to the dry ingredients and beat for 2 minutes.
  4. Add the remaining liquid and egg whites; beat for 2 minutes.
  5. Add chopped cherries and walnuts; blend well.
  6. Pour batter into a greased and floured pan.
  7. Bake at 375°F (190°C) for 1 hour in a tube pan, or 20 to 25 minutes for layered cakes.
