Ingredients

  • 1 (9-inch) graham cracker crumb pie crust
  • 1 small package raspberry jello
  • 1 1/2 tablespoons sugar
  • 1 cup boiling water
  • 1 (300 gram) package frozen raspberries
  • 1 teaspoon lemon juice
  • 4 oz cream cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Instructions

  1. Prepare the graham cracker crumb crust by mixing 1 1/2 cups of graham cracker crumbs with 1/4 cup melted butter and press into a 9-inch pie dish.
  2. Bake the crust for 10 minutes at 350°F (175°C), then let it cool.
  3. In a small bowl, dissolve raspberry jello in 1 cup boiling water.
  4. Add 1 1/2 tablespoons sugar, frozen raspberries, and lemon juice to the jello mixture. Stir until well combined and raspberries are thawed.
  5. In a separate bowl, beat 4 oz cream cheese with 1/4 cup sugar and 1 teaspoon vanilla until smooth.
  6. Combine the cream cheese mixture with the raspberry jello mixture and pour into the cooled crust.
  7. Chill the pie in the refrigerator for at least 4 hours or until set before serving.
