Vanilla eclairs feature crisp pastry shells filled with smooth vanilla pudding and topped with whipped cream, perfect for elegant desserts or special occasions.

Ingredients

  • Basic Eclairs (prepared as per original recipe)
  • 1 (3 or 3 1/4 oz.) package regular vanilla pudding mix
  • 1 1/2 cups milk
  • 1 cup whipping cream
  • 1/4 teaspoon vanilla
  • sifted powdered sugar
  • 1 slightly beaten egg white

Instructions

  1. Prepare Basic Eclair dough.
  2. Pipe or spread the dough onto a greased baking sheet in strips measuring 4 x 1 1/2 inches.
  3. Bake and cool the eclairs as directed in the Basic Eclair recipe.
  4. Prepare vanilla pudding by mixing the vanilla pudding mix with 1 1/2 cups of milk.
  5. Whip the cream with 1/4 teaspoon of vanilla until soft peaks form.
  6. Fill the cooled eclairs with vanilla pudding.
  7. Top the filled eclairs with whipped cream and sifted powdered sugar.
  8. Brush the tops with the slightly beaten egg white for a shiny finish.
