Ingredients

  • 3 cups sugar
  • 4 eggs
  • 16 oz. can pumpkin
  • 3 1/2 cups all purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1 cup oil
  • 2/3 cup water
  • 3 teaspoons vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Beat sugar and eggs until fluffy; add pumpkin and mix well.
  2. In a separate bowl, combine flour, salt, cinnamon, baking powder, baking soda, and nutmeg.
  3. Stir dry ingredients into the sugar mixture, alternating with oil and water.
  4. Add vanilla extract and mix well.
  5. Beat the mixture for 3 minutes; fold in chopped pecans.
  6. Divide the batter and pour into greased 5 inch x 3 inch loaf pans (makes 3 to 4 loaves).
  7. Bake at 350°F (175°C) for one hour.
  8. Brush hot vanilla glaze over the tops of warm loaves.
