Ingredients

  • 2 c. flour, sifted
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. margarine
  • 1 c. sugar
  • 1 large egg
  • 1 c. walnuts
  • 1 tsp. vanilla

Instructions

  1. Sift flour, baking powder, and salt together and set aside.
  2. In a large bowl, beat butter until light.
  3. Gradually beat in sugar.
  4. Add egg and vanilla.
  5. Continue beating until very light and fluffy.
  6. At low speed, beat in half of the flour mixture; incorporate the rest with hands to form a stiff dough.
  7. Add chopped nuts, mixing to combine well.
  8. Turn out dough onto a lightly floured surface.
  9. Divide dough in half.
  10. Shape each half into a 7-inch long roll with hands.
  11. Wrap each roll in plastic wrap or foil.
  12. Refrigerate until firm, about 8 hours or overnight.
  13. Cookie dough rolls can be stored in the refrigerator for up to 10 days.
  14. Slice the dough into desired thickness and bake as needed.
