Ingredients

  • 1 cup flour
  • 1/2 cup quick rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 2 cups canned pumpkin
  • 1 can evaporated milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1/2 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts

Instructions

  1. Combine the flour, quick rolled oats, brown sugar, and butter; mix until crumbly using an electric mixer at low speed.
  2. Press the crumb mixture into a 9 x 13-inch pan and bake at 350°F for 15 minutes.
  3. In a separate bowl, beat together canned pumpkin, evaporated milk, eggs, salt, sugar, ginger, and cinnamon until well combined.
  4. Pour the pumpkin mixture over the baked crust.
  5. Bake at 350°F for 20 minutes or until the filling is set.
  6. Mix the chopped nuts with the remaining sugar, ginger, and cinnamon, then sprinkle evenly over the baked pumpkin filling.
  7. Return to oven and bake for an additional 15 to 20 minutes until the topping is golden and the filling is firm.
  8. Allow to cool in the pan before serving.
  9. Serve with whipped cream if desired.
