Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup scalded milk
  • 1/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

  1. Melt butter in a pan.
  2. Add flour, milk, and sugar, then bring to a boil to thicken.
  3. Beat egg yolks in a bowl and add vanilla extract.
  4. Add the egg yolk mixture to the thickened base and stir well.
  5. Fold in stiffly beaten egg whites gently until fully combined.
  6. Pour the mixture into a greased baking dish.
  7. Set the dish in a pan of hot water.
  8. Bake at 350°F (175°C) for 45 to 50 minutes or until the soufflé is firm to the touch.
  9. Serve immediately.
