Vanilla Wafer Cake is a delightful treat that combines the buttery richness of a cake with the unique texture of crushed vanilla wafers. Enhanced with flaked coconut and chopped pecans, this cake is perfect for gatherings, celebrations, or simply indulging in a sweet moment at home.

Ingredients

  • 2 sticks butter
  • 2 c. granulated sugar
  • 6 eggs
  • 1/2 c. milk
  • 12 oz. box vanilla wafers, crushed
  • 7 oz. flaked coconut
  • 1 c. chopped pecans

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add crushed wafers alternately with milk.
  4. Add coconut and pecans and mix well.
  5. Pour into a 12 cup tube pan greased with nonstick spray.
  6. Cook completely before removing from pan.
  7. May be glazed with powdered sugar and topped with pecan halves and maraschino cherries. Freezes well.
