- Mix bread crumbs with grated Parmesan cheese, nutmeg, and white pepper.
- Spread the mixture in a flat dish.
- Beat the eggs in a separate flat dish.
- Using the bones as handles, dip each veal chop into the beaten eggs, then press into the bread crumb mixture until coated.
- Transfer the coated veal chops to waxed paper.
- Gently pound each chop on one side with the flat side of a cleaver to press the crumbs onto the meat.
- Heat 1/2 cup of clarified butter in a large skillet over medium heat.
- Saute the veal chops until browned on both sides.
- Transfer the cooked chops to paper towels to drain excess fat.
- Keep warm in a 250°F (120°C) oven until ready to serve.
