Ingredients

  • 1 1/2 cups dried bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1/8 teaspoon nutmeg
  • 1 1/2 teaspoons white pepper
  • 2 eggs
  • 4 veal chops
  • 1/2 cup clarified butter

Instructions

  1. Mix bread crumbs with grated Parmesan cheese, nutmeg, and white pepper.
  2. Spread the mixture in a flat dish.
  3. Beat the eggs in a separate flat dish.
  4. Using the bones as handles, dip each veal chop into the beaten eggs, then press into the bread crumb mixture until coated.
  5. Transfer the coated veal chops to waxed paper.
  6. Gently pound each chop on one side with the flat side of a cleaver to press the crumbs onto the meat.
  7. Heat 1/2 cup of clarified butter in a large skillet over medium heat.
  8. Saute the veal chops until browned on both sides.
  9. Transfer the cooked chops to paper towels to drain excess fat.
  10. Keep warm in a 250°F (120°C) oven until ready to serve.
