Ingredients

  • 1 lb. veal cutlet
  • seasoned flour (salt, pepper, garlic salt)
  • 3 beaten eggs
  • parsley
  • butter
  • 1/3 cup lemon juice
  • 1/3 cup butter

Instructions

  1. Trim veal and cut into small pieces approximately 3 inches long.
  2. Dredge veal pieces in seasoned flour, then dip into beaten eggs with parsley.
  3. In butter, brown the coated veal pieces in a frying pan until they resemble small omelettes.
  4. Remove the veal from the pan and place in a roasting pan.
  5. In the same pan, add lemon juice, butter, and sherry to prepare the sauce.
  6. Cook the sauce briefly, then pour over the veal before serving.
