Veg Soup From Ham Bone

A hearty ham bone vegetable soup packed with flavors from vegetables and ham, perfect for comforting meals and utilizing leftover ham bones for rich, savory broth.

Ingredients

  • 1 ham bone
  • 1 large can V-8 juice (low-salt)
  • 1 large can chicken stock broth
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup diced green pepper
  • 1 cup diced carrots
  • more vegetables (if desired)

Instructions

  1. Simmer the vegetable broth and ham bone for at least 4 hours.
  2. Remove the meat from the ham bone and add it back into the broth.
  3. Cool the soup overnight in the refrigerator and remove the cooled fat on top in the morning.
  4. Reheat the soup until hot and add your choice of noodles, such as Kluski noodles.
  5. Serve and enjoy!
