Ingredients

  • 3 1/2 cups V-8 juice
  • 2 small packages lemon jello
  • 4 tablespoons vinegar
  • 1/2 cup celery, finely chopped
  • 1/2 cup cucumber, finely chopped
  • 1/2 cup green onions, finely chopped

Instructions

  1. In a saucepan, heat 2 cups of V-8 juice.
  2. Add lemon jello and stir until dissolved.
  3. Add remaining V-8 juice, vinegar, salt, and pepper to taste.
  4. Chill until syrupy.
  5. Fold in finely chopped celery, cucumber, and green onions.
  6. Pour into a mold and chill until set.
