Ingredients

  • 2 lb. beef stew meat
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 6 carrots, cut in chunks
  • 2 tsp. salt
  • 2 Tbsp. tapioca
  • 2 Tbsp. sugar
  • 1 1/2 c. tomato juice
  • 3 medium potatoes, cubed
  • mushrooms (if desired)

Instructions

  1. Place all ingredients in a casserole dish in the order given.
  2. Cover tightly with foil.
  3. Bake in a 250°F (120°C) oven for 4 hours.
