  • 1/3 c. vinegar
  • 1 c. celery
  • 1 small jar cut pimento
  • 1 large can asparagus

  2. Add 1 cup boiling water, sugar, lemon juice, vinegar, and 13 drops of green food coloring.

  5. Combine diced celery, asparagus, and pimento; chill the mixture thoroughly.
  6. Serve the vegetable salad on lettuce leaves.

Tips & Substitutions

For an extra flavor boost, consider adding chopped herbs like parsley or dill to the salad. If you prefer a sweeter taste, you can substitute honey for sugar. For a vegan version, replace the gelatin with agar-agar. Ensure the mixture cools completely before adding the vegetables to maintain their crunch.

Serving Suggestions

This salad is best served chilled on a bed of crisp lettuce leaves. Pair it with a light protein, such as grilled chicken or fish, for a balanced meal. It complements dishes like Beef Roast(Marinated) or can be enjoyed as a refreshing side during holiday gatherings.

Storage & Reheating

Store any leftover salad in an airtight container in the refrigerator for up to 3 days. The gelatin base helps preserve its texture, but it's best enjoyed fresh. If you need to reheat, avoid microwaving as it may cause the gelatin to break down; serve cold instead.

Frequently Asked Questions

Can I use fresh vegetables instead of canned?

Yes, fresh vegetables can enhance the salad's flavor and texture. Consider using fresh asparagus and crunchy celery for a vibrant taste. Just be sure to blanch the asparagus briefly to soften it slightly while retaining its bright color.

How do I prevent the gel from becoming too firm?

To achieve a perfect consistency, ensure you follow the gelatin package instructions for water ratios. Adding too much gelatin can lead to a rubbery texture. If it sets too firm, you can gently reheat with a bit of water to loosen it.

What can I add for extra flavor?

You can incorporate diced bell peppers or olives for added color and flavor. Additionally, drizzling with Garlic French Dressing before serving can offer a delightful tang that complements the salad's ingredients beautifully.
