Ingredients

  • 1 Tbsp butter
  • 2 c grated cheese
  • 3/4 c canned corn
  • 1/2 c chopped green pepper
  • 5 slices toast
  • 1 egg yolk beaten
  • 1/2 c tomato puree
  • 1/4 tsp paprika

Instructions

  1. Melt butter in a saucepan.
  2. Add grated cheese, stirring until melted.
  3. Add canned corn and chopped green pepper; stir.
  4. Add tomato puree, beaten egg yolk, and paprika to the mixture.
  5. Heat over low flame until the egg is cooked and the mixture is heated through.
  6. Pour the vegetable creole over the toast slices.
  7. Serve immediately.
