Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups oil
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 medium Granny Smith apples, finely chopped
  • 1 cup chopped walnuts

Instructions

  1. Combine flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  2. In a large bowl, beat on medium speed the sugar, oil, eggs, and vanilla until smooth.
  3. Gradually beat in the flour mixture until smooth.
  4. Fold in the chopped apples and walnuts.
  5. Pour batter into a greased pound cake pan.
  6. Bake at 325°F (163°C) for 1 hour and 15 minutes.
  7. Cool 10 minutes in the pan before removing.
