Vegetable Ham Soup

Ingredients

  • 1 1/2 c. dried navy beans
  • 1 (3 lb.) meaty ham bone
  • 3 qt. water
  • 1 1/2 c. chopped carrots
  • 1 1/2 c. chopped potatoes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Rinse and soak beans overnight.
  2. Combine beans, bone and water in large Dutch oven.
  3. Bring to a boil.
  4. Reduce heat; cover and simmer 3 to 3 1/2 hours.
  5. Remove ham and bone.
  6. Chop ham and add ham and remaining ingredients to beans.
  7. Simmer 30 minutes.
