Vegetable Jello Mold

A colorful and refreshing vegetable jello mold combining crisp vegetables with tangy lemon jello, perfect as a light appetizer or side dish for summer gatherings.

Ingredients

  • 1 pkg. radishes, sliced
  • 1 or 2 cucumbers, sliced
  • 1 small onion, grated
  • 2 carrots, sliced
  • celery
  • 2 tsp. vinegar
  • lettuce
  • mayonnaise
  • 1 (4 oz.) box lemon jello

Instructions

  1. Combine sliced radishes, cucumbers, grated onion, sliced carrots, and celery in a bowl.
  2. In a separate bowl, prepare the lemon jello by mixing the contents with less water than usual and letting it gel slightly.
  3. Add the chopped vegetables, onion, and vinegar to the slightly gelled jello and mix well.
  4. Pour the mixture into a mold and let it gel until firm, about 2-4 hours.
  5. Unmold the vegetable jello onto a bed of lettuce.
  6. Top with mayonnaise as desired and serve.
