- In a separate bowl, prepare the lemon jello by mixing the contents with less water than usual and letting it gel slightly.
- Add the chopped vegetables, onion, and vinegar to the slightly gelled jello and mix well.
- Pour the mixture into a mold and let it gel until firm, about 2-4 hours.
- Unmold the vegetable jello onto a bed of lettuce.
- Top with mayonnaise as desired and serve.
