Ingredients

  • 6 Tbsp. melted margarine
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup grated raw carrot
  • 2 (10 oz.) packages chopped spinach
  • 3 eggs
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 cup matzo meal
  • oil for frying

Instructions

  1. Sauté onion, celery, and carrot in oil for about 10 minutes, stirring occasionally.
  2. Cook spinach and drain thoroughly.
  3. Combine cooked vegetables and spinach in a mixing bowl.
  4. Add beaten eggs, salt, pepper, melted margarine, and matzo meal to the vegetable mixture.
  5. Spoon the mixture into a greased 1 1/2-quart baking dish.
  6. Bake at 350°F for about 45 minutes or until the kugel is firm and golden brown.
