Vibrant marinated carrots combined with onions and peppers, soaked in a tangy tomato sauce, perfect as a refreshing side dish for picnics or family dinners.

Ingredients

  • 2 lb. fresh carrots
  • 1 onion
  • 1 bell pepper
  • 1 can condensed tomato soup
  • 1/2 cup vegetable oil
  • 1/2 cup vinegar
  • 1/2 cup sugar

Instructions

  1. Slice carrots thin and boil in salted water for 10 minutes or until barely tender.
  2. Drain and layer with sliced onion and bell pepper, finishing with carrots on top.
  3. In a saucepan, combine condensed tomato soup, vegetable oil, vinegar, and sugar, then bring to a boil.
  4. Pour the hot tomato mixture over the layered vegetables.
  5. Refrigerate and let marinate for at least a few hours before serving.
