Ingredients

  • 3 Tbsp. butter
  • 1 1/2 c. chopped celery
  • 1 c. shredded carrot
  • 1/4 c. chopped onion
  • 4 c. water
  • 2 chicken bouillon cubes
  • 4 drops hot pepper sauce
  • 1 1/4 c. mashed potato flakes
  • 2 c. milk

Instructions

  1. In a large saucepan, melt the butter.
  2. Stir in the chopped celery, shredded carrot, and chopped onion.
  3. Cook over medium heat for 10 minutes, stirring occasionally; do not brown the vegetables.
  4. Add water, chicken bouillon cubes, and hot pepper sauce; bring to a boil.
  5. Cover and simmer for 20 minutes, or until the vegetables are tender.
  6. Gradually stir in the mashed potato flakes.
  7. Add the milk and cheese, stirring constantly until the cheese is melted.
  8. Do not let the soup boil after adding the cheese.
