Ingredients

  • 1/4 cup broccoli
  • 1/4 cup carrots
  • 1 large potato
  • 1/4 cup cauliflower
  • 1/4 cup corn
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons butter

Instructions

  1. Bake the large potato in the microwave for 10 minutes until tender.
  2. Cook broccoli, carrots, cauliflower, and corn in a skillet with butter until tender.
  3. Cut the baked potato in half and scoop out some of the flesh to create a pocket.
  4. Add the cooked vegetables into the split potato and sprinkle with salt and pepper.
  5. Serve hot and enjoy.
