Vegetable Tortilla
Ingredients
- 1 tbsp oil ⓘ
- 1 medium onion, diced ⓘ
- 1 clove garlic, finely chopped ⓘ
- 1 None red pepper, diced
- 1 medium carrot, peeled and sliced ⓘ
- 150 g mushrooms, sliced ⓘ
- 1-2 None spring onions, finely sliced ⓘ
- 75 g reduced fat feta cheese ⓘ
- 4 medium eggs ⓘ
- 1 bunch mixed herbs, such as parsley and basil ⓘ
- 125 ml semi-skimmed milk ⓘ
Instructions
- Preheat the oven to 350°F. Heat oil in a frying pan and saute the onion, garlic, pepper, carrot, mushrooms and spring onions for about 5 mins. Transfer to a greased 8 inch round baking dish. Crumble the feta on top.
- Beat the eggs in a bowl and add the herbs and milk. Season with salt and pepper and pour over the vegetables and cheese. Bake for 20 mins until golden brown.
