Ingredients

  • 2 cups cooked brown rice
  • 2 cups broccoli florets
  • 2 medium carrots, cut into strips
  • 1 medium zucchini, shredded
  • 1 cup green beans (French-cut)
  • 1 (16 oz.) jar marinara sauce
  • 4 oz. shredded Longhorn cheese
  • 4 oz. shredded Monterey Jack cheese

Instructions

  1. Place cooked brown rice in a 2-quart baking dish.
  2. Cook broccoli florets, carrots, zucchini, and green beans until tender-crisp; drain.
  3. Spoon the cooked vegetables over the rice in the baking dish.
  4. Pour marinara sauce evenly over the vegetables and rice.
  5. Cover the dish and bake at 375°F (190°C) for 30 minutes.
  6. Combine the shredded Longhorn and Monterey Jack cheeses.
  7. Sprinkle the cheese mixture over the casserole.
  8. Bake uncovered for an additional 5 to 10 minutes to melt the cheese.
