Creamy and cheesy vegetarian nachos layered with fresh vegetables, perfect for sharing at parties or a satisfying snack for cheese lovers and veggie fans alike.

Ingredients

  • 8 oz. tortilla chips
  • 16 oz. can refried beans
  • 1/2 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped onion
  • 1 cup grated Monterey Jack cheese
  • 1/2 cup salsa

Instructions

  1. Heat the refried beans until warm.
  2. On a large platter, layer the tortilla chips.
  3. Spread the heated refried beans over the chips.
  4. Add shredded lettuce on top.
  5. Sprinkle chopped tomatoes and chopped onion over the lettuce.
  6. Sprinkle half of the grated Monterey Jack cheese over the toppings.
  7. Add salsa over the cheese.
  8. Sprinkle the remaining cheese on top.
  9. Place the assembled nachos in the broiler for 2 minutes until cheese melts and bubbles.
  10. Serve immediately.
