Ingredients

  • 4 large peppers
  • 1 (10 oz.) pkg. broccoli
  • 1 (10 oz.) pkg. cauliflower
  • 1/2 cup bread crumbs
  • 1 small onion, chopped
  • salsa
  • 1/2 to 1 cup Mozzarella cheese

Instructions

  1. Boil the peppers until softened but still slightly firm.
  2. Cook broccoli, cauliflower, and chopped onion in boiling water until tender. Drain well.
  3. Mix the cooked vegetables with bread crumbs, mozzarella cheese, and salsa to moisten, adding water if needed.
  4. Fill the softened peppers with the vegetable mixture.
  5. Bake until the cheese melts and the peppers are heated through.
