Ingredients

  • 6 oz. vermicelli, broken up
  • 1 medium sweet red pepper, cut in strips
  • 1 medium sweet green pepper, cut in strips
  • 1 (8 oz.) jar cheese spread with jalapeno peppers
  • 1 (16 oz.) can golden hominy, drained
  • 1 (8 oz.) can red kidney beans, drained
  • 1 (8 oz.) carton sour cream

Instructions

  1. Stir‑fry red and green peppers until crisp‑tender.
  2. Stir in cheese spread until melted.
  3. Add hominy and kidney beans, cooking until heated through.
  4. Stir in sour cream and cook about 5 minutes.
  5. In a large kettle, cook vermicelli 5 to 7 minutes until tender.
  6. Drain and transfer to a large platter.
  7. Top pasta with the cheese mixture.
  8. Toss to coat and serve immediately.
