- Mix the frozen broccoli, cauliflower, and carrots together; pour boiling water over the vegetables to separate them, then drain well.
- Melt 1/2 stick of butter with the Velveeta cheese until smooth.
- Mix the melted cheese and butter with the drained vegetables.
- Crush the Ritz crackers and melt the remaining 1/2 stick of butter; mix with the crushed crackers.
- Spread the buttered cracker mixture over the vegetable and cheese mixture in a casserole dish.
- Bake at 350°F for 1 hour until bubbly and golden on top.
