A comforting veggie casserole featuring tender broccoli, cauliflower, and carrots combined with creamy Velveeta cheese and a crunchy cracker topping, perfect for family dinners.

Ingredients

  • 10 oz. bag frozen broccoli
  • 10 oz. bag cauliflower
  • 10 oz. bag carrots
  • 1 stick butter
  • 1 cup Ritz crackers
  • 8 oz. Velveeta cheese

Instructions

  1. Mix the frozen broccoli, cauliflower, and carrots together; pour boiling water over the vegetables to separate them, then drain well.
  2. Melt 1/2 stick of butter with the Velveeta cheese until smooth.
  3. Mix the melted cheese and butter with the drained vegetables.
  4. Crush the Ritz crackers and melt the remaining 1/2 stick of butter; mix with the crushed crackers.
  5. Spread the buttered cracker mixture over the vegetable and cheese mixture in a casserole dish.
  6. Bake at 350°F for 1 hour until bubbly and golden on top.
