Veggie Shepherd'S Pie
Ingredients
- 1/2 stick butter, salted ⓘ
- 1 cup onion, chopped ⓘ
- 2 carrots, peeled and diced small ⓘ
- 1 pound lean ground beef ⓘ
- 1 tablespoon sea salt ⓘ
- 1/2 teaspoon black pepper ⓘ
- 2 teaspoons tomato paste ⓘ
- 1 cup chicken broth ⓘ
- 2 teaspoons Worcestershire sauce ⓘ
- 1 small package sliced mushrooms ⓘ
- 1/2 cup fresh or frozen sweat peas ⓘ
Instructions
- Bake the Green Giant(R) Mashed Cauliflower, as directed.
- For the filling, melt the butter in saute pan set over medium high heat. Once the butter starts to melt, add the onion and cook until translucent.
- Next add in the carrots and mushrooms and saute just until they begin to take on color, approximately 3 to 4 minutes.
- Add the ground beef, salt and pepper and cook until the beef is browned and cooked through.
- Add the tomato paste, chicken broth, Worcestershire and stir to combine.
- Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
- Add the peas to the beef mixture and spread evenly into serving dishes. Top each serving with the warm Green Giant(R) Mashed Cauliflower.
