Ingredients

  • 2 pieces venison
  • 2 eggs
  • flour
  • salt
  • pepper
  • 1/3 cup oil

Instructions

  1. Slice the venison into 1/2 inch thick pieces.
  2. Season the venison with salt, pepper, and sprinkle with flour.
  3. Pound the seasoned venison to embed the seasonings.
  4. Place the meat in an oiled heavy skillet over medium heat.
  5. Cover the skillet with an inverted pie plate and brown the meat for 5 minutes.
  6. Remove the pie plate, turn the meat, and cook for another 5 minutes.
  7. Remove the meat from the skillet and drop the eggs into the skillet; add 2 or 3 drops of water.
  8. Cover the skillet again with a pie plate and steam the eggs for 3 minutes without turning.
  9. Optional: use the same skillet to make gravy after removing the eggs.
  10. Serve hot and enjoy.
