- In a frypan, place sausage links in 1/2 cup of water and simmer for about 5 minutes.
- Pour off water and fat, then brown the sausage.
- Cut the sausage into chunk-sized pieces.
- Add the sausage, peppers, onions, eggplant, mushrooms, and spaghetti sauce to a large pot.
- Bake in a 350°F (175°C) oven for 1 1/2 hours, adding water as needed to prevent sticking and stirring occasionally.
- Serve with noodles or rice.
- Alternatively, a crock-pot can be used for all-day cooking.
