Ingredients

  • 1 package Italian sweet or hot sausage
  • 4 peppers, cut up
  • 4 onions, cut up
  • 1 jar Ragu spaghetti sauce
  • 1 jar cut-up mushrooms
  • 1 eggplant, peeled and cut up

Instructions

  1. In a frypan, place sausage links in 1/2 cup of water and simmer for about 5 minutes.
  2. Pour off water and fat, then brown the sausage.
  3. Cut the sausage into chunk-sized pieces.
  4. Add the sausage, peppers, onions, eggplant, mushrooms, and spaghetti sauce to a large pot.
  5. Bake in a 350°F (175°C) oven for 1 1/2 hours, adding water as needed to prevent sticking and stirring occasionally.
  6. Serve with noodles or rice.
  7. Alternatively, a crock-pot can be used for all-day cooking.
