Very Berry Muffins

Ingredients

  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 c. fresh or frozen berries
  • 2 eggs
  • 1/2 c melted butter
  • 1 c. milk

Instructions

  1. Preheat oven to 400°F.
  2. Sift all the dry ingredients together except the topping.
  3. Add berries and mix until well coated.
  4. In a small bowl, beat eggs well and add melted butter and milk.
  5. Quickly stir the liquid mixture into the dry mix.
  6. Stir just until blended.
  7. Fill muffin cups 3/4 full.
  8. Sprinkle a teaspoon of cinnamon sugar on top of each muffin.
  9. Bake for 20 minutes or until a toothpick tests clean.
