Ingredients

  • 4 cups leeks, white parts only, chopped

  3. Bring to a boil and simmer until potatoes are soft, about an hour.
  4. Add salt, pepper, and a few drops of Worcestershire sauce to taste.
  5. Puree the soup through a processor or blender until smooth.
  6. Heat the soup through before serving.
  7. Add about 1/2 cup of cream or milk and stir well.
  8. Serve sprinkled with chopped chives.
