Ingredients

  • 1/2 cup parsley
  • 1 shallot
  • 2/3 cup vegetable oil
  • 2 tablespoons red wine vinegar
  • 4 teaspoons Dijon mustard
  • 2 teaspoons sugar
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 head romaine lettuce
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped walnuts

Instructions

  1. In a blender, blend parsley and shallot until well combined.
  2. Add vegetable oil, olive oil, red wine vinegar, Dijon mustard, sugar, salt, and pepper to the blender.
  3. Blend all ingredients until the dressing is smooth and well mixed.
  4. Wash and chop the romaine lettuce.
  5. In a large bowl, combine the chopped lettuce, shredded Monterey Jack cheese, and chopped walnuts.
  6. Pour the dressing over the salad and toss gently to combine.
