Delicious bran muffins with orange, apple, cinnamon, and vanilla offer a healthy, flavorful snack perfect for breakfast or a quick energy boost, suitable for all ages.

Ingredients

  • 6 eggs or Egg Beaters or 12 egg whites
  • 2 tsp vanilla
  • 1 orange (skin and all)
  • 2 to 4 Tbsp sugar
  • 1 apple (skin and all, at least 5 oz)
  • 6 Wasa crackers, crushed
  • 2 c bran (unprocessed bran and oat bran optional)
  • 4 Tbsp powdered skim milk
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 chopped apple

Instructions

  1. Combine eggs or Egg Beaters, vanilla, orange (skin and all), 2 to 4 tablespoons sugar, and chopped apple in a blender or food processor and blend until smooth.
  2. Add the liquid mixture to the dry ingredients and mix until all dry ingredients are moistened.
  3. Spray muffin tins with Pam or non-stick spray and fill each cup with the batter.
  4. Bake at 375°F (190°C) for 25 minutes or until a toothpick inserted into the center comes out clean.
