Vi'S Muffins
Delicious bran muffins with orange, apple, cinnamon, and vanilla offer a healthy, flavorful snack perfect for breakfast or a quick energy boost, suitable for all ages.
Ingredients
- 6 eggs or Egg Beaters or 12 egg whites ⓘ
- 2 tsp vanilla ⓘ
- 1 orange (skin and all) ⓘ
- 2 to 4 Tbsp sugar ⓘ
- 1 apple (skin and all, at least 5 oz) ⓘ
- 6 Wasa crackers, crushed ⓘ
- 2 c bran (unprocessed bran and oat bran optional)
- 4 Tbsp powdered skim milk ⓘ
- 1 tsp baking soda ⓘ
- 2 tsp cinnamon ⓘ
- 1 chopped apple ⓘ
Instructions
- Combine eggs or Egg Beaters, vanilla, orange (skin and all), 2 to 4 tablespoons sugar, and chopped apple in a blender or food processor and blend until smooth.
- Add the liquid mixture to the dry ingredients and mix until all dry ingredients are moistened.
- Spray muffin tins with Pam or non-stick spray and fill each cup with the batter.
- Bake at 375°F (190°C) for 25 minutes or until a toothpick inserted into the center comes out clean.
