Ingredients

  • 8 oz sour cream
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 cup cream of chicken soup
  • 1 cup raw rice
  • 1 package frozen chopped broccoli
  • 1/2 can green chiles, chopped
  • 5 oz Cheddar cheese, chopped into small cubes

Instructions

  1. Thaw and drain the frozen chopped broccoli.
  2. Cook the rice until tender.
  3. Saute chopped onion and celery in 1 to 2 tablespoons of margarine until soft.
  4. Mix the cooked vegetables with cream of chicken soup and chopped green chiles.
  5. Fold in the cooked rice, sour cream, and chopped cheddar cheese.
  6. Transfer the mixture to an oblong baking dish.
  7. Bake at 350°F (175°C) for 30 to 40 minutes until bubbly and cheese is melted.
