Ingredients

  • 1 lb. prepared chicken salad
  • 1/3 c. chopped toasted walnuts
  • 1 tsp. Dijon mustard
  • 1/2 tsp. dried tarragon leaves
  • 1 small cantaloupe or honeydew melon

Instructions

  1. In a medium bowl, combine the prepared chicken salad, chopped toasted walnuts, Dijon mustard, and crushed tarragon; mix well.
  2. Cut each cantaloupe or honeydew melon quarter lengthwise into 4 slices.
  3. Arrange 4 slices on each of 4 spinach-lined plates.
  4. Spoon 1/2 cup of the chicken mixture onto each plate next to the cantaloupe slices.
  5. Garnish with walnut halves before serving.
