Ingredients

  • 1 1/2 c. uncooked elbow macaroni
  • 2 c. sliced celery
  • 1/2 c. sweet pickle relish or diced sweet pickles
  • 1/4 to 1/2 c. chopped onion
  • 3/4 c. coarsely chopped walnuts
  • 1/2 c. mayonnaise
  • 1 tsp. prepared mustard
  • 2 Tbsp. lemon juice
  • 1 hard-boiled egg
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the macaroni until tender in salted water; drain and rinse with cold water.
  2. Add sliced celery, sweet pickle relish or diced pickles, chopped onion, and salt and pepper to taste.
  3. Stir in coarsely chopped walnuts.
  4. Mix mayonnaise, prepared mustard, and lemon juice to make the dressing.
  5. Add the dressing to the salad and mix lightly to combine.
  6. Chill the salad before serving. Garnish with halved hard-boiled egg and walnut halves if desired.
