Ingredients

  • 1 lb. fresh broccoli
  • 1/2 cup chicken broth
  • 4 tsp. cornstarch
  • 2 Tbsp. tamari (soy sauce)
  • 1 Tbsp. dry sherry
  • 1/4 tsp. sugar
  • 3 Tbsp. vegetable oil
  • 2/3 cup walnuts
  • 1 large carrot
  • 1 tsp. ginger
  • 1 clove garlic
  • 1/2 c. water
  • hot cooked rice

Instructions

  1. Cut the broccoli into flowerets and slice them in half lengthwise.
  2. In a small bowl, combine chicken broth, cornstarch, tamari, dry sherry, and sugar; set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add minced garlic and ginger; sauté until fragrant, about 30 seconds.
  5. Add sliced carrots and cook for 2-3 minutes.
  6. Add broccoli to the skillet and stir-fry for about 4-5 minutes until tender-crisp.
  7. Pour the prepared sauce over the vegetables and cook, stirring, until the sauce thickens, about 2 minutes.
  8. Stir in walnuts and cook for another minute.
  9. Serve hot over cooked rice.
