  • 24 oz. frozen corn
  • 1/2 tsp. ground cumin
  • grated zest of 1 lime
  • juice of 2 limes
  • 1/4 tsp. salt

Instructions

  1. In a medium pot, heat oil over medium-high heat.
  2. Add onion; cook stirring occasionally until very tender, about 10 minutes.
  3. Stir in frozen corn, ground cumin, lime zest, lime juice, and salt.
  4. Cover and cook until heated through, about 10 minutes.
