Ingredients

  • 50 gms/ 2 oz softened butter
  • 3 tablespoons golden syrup
  • 12 cup sugar
  • 12 cup boiling water
  • 1 -1 12 teaspoon ground ginger
  • 1 egg
  • 1 cup flour
  • 14 teaspoon baking soda
  • 12 teaspoon baking powder

Instructions

  1. Place butter, syrup, sugar, and boiling water in a bowl and stir gently until the butter is melted.
  2. Add the egg and whisk briskly.
  3. Add the sifted dry ingredients and pour into a greased and floured loaf pan.
  4. The mixture will be quite thin.
  5. Bake at 350 F for about 30 or until a toothpick inserted comes out clean.
