Ingredients

  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 cup scalded milk
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 2/3 cup raspberry jelly

Instructions

  1. Beat eggs until very light and lemon colored.
  2. Beat in sugar, vanilla, and salt.
  3. Stir in melted butter combined with scalded milk.
  4. Sift cake flour with baking powder and beat quickly into the egg mixture.
  5. Pour batter into two buttered 9-inch cake pans.
  6. Bake at 350°F for 25 to 30 minutes or until done.
  7. Cool in pans for 5 minutes.
  8. Turn out onto a rack and finish cooling.
  9. Spread raspberry jelly between the two layers.
  10. Sprinkle the top with confectioners sugar.
