Ingredients

  • 2 bunches watercress
  • 1 Tbsp Dijon mustard
  • 2 Tbsp red wine vinegar
  • salt to taste
  • pepper to taste
  • 4 Tbsp oil
  • 1 hard-boiled egg, peeled and chopped

Instructions

  1. Trim off the tough ends of the watercress and discard.
  2. Rinse the leaves and tender stems.
  3. Drain well.
  4. Put mustard, vinegar, salt, and pepper in a salad bowl.
  5. Blend with a wire whisk until combined.
  6. Add oil, beating with the whisk until the dressing is emulsified.
  7. Add watercress, chopped hard-boiled egg, and chopped onion to the bowl.
  8. Toss gently to combine and serve.
